The Ultimate Corned Beef Hash is Here
Inspiration is overrated. Sometimes, a good steal is worth a thousand gold. (No, that’s not a Chinese idiom.)

Crispy, Heartly, Satisfying and Addictive: The Ultimate Corn Beef Hash is Irresistible
The source of my inspiration comes from Marc’s potato pancakes. The source of Marc’s potato pancakes comes from his secret lover, the well-known Master French Chef…..oh, he won’t let me tell.
Assuming we’ve all mastered frying an egg sunny-side-up, the rest of this dish requires the unbeatable combination of a Kong-Fu flip (not you, flip the pancake…) and an elegant French chanson as background music. Josquin des Prez would be my top choice.
Ingredients
Corned Beef, a Potato, a Red Onion, Fresh Rosemary, Corn Starch, E.V. Olive Oil, Egg.
- Peel and grade the potato, rinse it thoroughly (like 3 times), spin dry;
- Medium flame, your frying pan should be hot by this time. A nice splash of Olive Oil in the pan;
- While the oil becomes happier in the pan, coast your potato shreds with generous amount of Corn Starch. This is to prevent burning and insures crispiness.
- Gently place a loose layer of potato shreds in the pan, season with salt and pepper, please don’t crowd them;
- 2 minutes later, place diced Corned Beef, Red Onion & Rosemary on top of the potato layer, please don’t crowd them either;
- 2 minutes later, as the bottom potato layer browns beautifully and the heat embraces the beef, place another loose layer of potato shreds. Season with salt and pepper. Please don’t crowd them, please.
- Now, be brave and FLIP!!
- Soon, we have a full view of the beautiful browning. How rewarding!
- As the other side is browning, this would be a good time to fry your egg.
That’s it! This crispy delight topped with a savory egg is my definition of good times!
